The successors of "FuKee", Francis and Alvin, were already friends for many years. During one of their conversations, the two discovered shared elements between siu mei and whisky in culinary culture and core values—craftsmanship, perseverance, and the Hong Kong spirit. Thus, the idea emerged to create "the first whisky designed to pair with siu mei."

Special guests aboard the Star Ferry, after tasting over twenty whisky variants, unanimously selected one that best complements Char Siu.
Blending the essence of time and terroir, achieving a vessel of nectar.

水楢木(ミズナラ)是一種原生於日本的橡木樹種,水楢木也被稱為日本橡木或蒙古橡木。它主要生長在北海道等北部地區,由於生長緩慢(需二百年以上才能用於製桶)、木質多結、多孔且易漏水,因此被視為稀有且昂貴的木材,常用於高級家具或酒桶製作。
由水楢木製作的桶材會賦予酒液獨特的風味,包括桑達木、椰子、香料、日本香或雪松等芳香,帶來複雜而優雅的口感。水楢木稀缺且加工困難,這類威士忌通常定位為高端奢侈品,也逐漸被用於其他國家的威士忌如蘇格蘭單一麥芽或美國波本的二次熟成。
*Note:
Mizunara wood (ミズナラ) is a species of oak native to Japan, also known as Japanese oak or Mongolian oak. It primarily grows in northern regions such as Hokkaido. Due to its slow growth (requiring over two hundred years to be usable for barrel-making), knotty texture, porosity, and tendency to leak, it is regarded as a rare and expensive timber, commonly used for high-end furniture or barrel production.
Barrels made from Mizunara wood impart unique flavors to the spirit, including notes of sandalwood, coconut, spices, Japanese incense, or cedar, resulting in a complex and elegant palate. Given the scarcity of Mizunara wood and the challenges in processing, such whiskies are typically positioned as high-end luxury products and are increasingly used for secondary maturation in whiskies from other countries, such as Scottish single malts or American bourbons.
